Southern Biscuits
Supremely flaky, buttery Southern-style biscuits using the laminating technique. Folding and patting the dough out several times, rather than just mixing it, is what builds the visible flaky layers.

Mix flour, baking powder, bicarb and salt.
Cut cold butter into flour using a pastry cutter until pea-sized lumps remain.
Add buttermilk, stir until just combined.
Pat to 2cm, fold in thirds, pat out again. Repeat twice.
Cut rounds, place touching on a lined tray. Brush with melted butter. Bake at 220°C for 14 minutes.
