Cut the paneer into cubes and pan-sear over medium-high heat until golden on most sides, about 4 minutes.
Add the jalapeno and celery and cook until softened, about 4 minutes.
Stir in the BBQ sauce, brown sugar, hot sauce and black pepper, coating the paneer well.
Simmer for another minute so the glaze thickens slightly.
Meanwhile, cook the grits according to the package directions, whisking often to keep them smooth.
Let the paneer mixture rest for about 14 minutes off the heat so the glaze sets.
Spoon over the warm grits and serve.
