A Quebec-style fondue using Oka or mild washed-rind cheese with white wine. Adding the cheese gradually in handfuls, stirring in a figure-8, is what keeps it silky instead of splitting into a greasy mess.

400gOka or Gruyere cheese, grated
200gEmmental, grated
1 cupdry white wine
1 clovegarlic, halved
2 tbspcornflour
2 tbspkirsch or brandy
pinchnutmeg
crusty bread, apple slices and cornichonsfor dipping
Instructions

Rub inside of a heavy pot with garlic. Discard garlic.

Heat wine in the pot until gently simmering.

Toss cheese with cornflour. Add to wine in handfuls, stirring in a figure-8 motion.

When smooth, stir in kirsch and nutmeg.

Transfer to a fondue burner. Serve with dippers.
