Easy Butter Tarts

Canadian butter tarts baked just until the filling is set at the edges but still a little wobbly in the centre — that's what keeps them gooey rather than firm.

Ingredients

12mini tart shells
1 cupbrown sugar
1/2 cup / 2butter and eggs

Instructions

1

Whisk the brown sugar, melted butter and eggs together until smooth and well combined, this is the filling, so make sure there are no streaks of unmixed butter left.

2

Pour the filling into the tart shells, filling them about three-quarters full to leave room for the filling to bubble up slightly as it bakes.

3

Bake at 190C for 15-18 minutes, checking from 15 minutes on.

4

You want the edges set but the centre still visibly wobbly, since that is what keeps butter tarts gooey rather than firm once they cool.
