Bannock Bread

A simple unleavened griddle bread with Indigenous Canadian roots, served with butter and jam. Kneading the dough only briefly, just until smooth, keeps bannock tender instead of turning tough and chewy.

Ingredients

2 cupsplain flour
2 tspbaking powder
1/2 tspsalt
1 tbspsugar
3/4 cupwater or milk
3 tbspvegetable oil or lard

Instructions

Mix flour, baking powder, salt and sugar.

Stir in water and oil until a shaggy dough forms.

Turn onto a floured surface and knead briefly until smooth.

Flatten into a round about 2cm thick.

Cook in a greased frying pan over medium heat 8-10 minutes per side until golden and cooked through. Serve with butter and jam.
