
Garlicky Chicken Goulash
A garlicky European goulash with roasted chicken thighs, mushrooms and cabbage, finished with butter, sour cream and dill, served over mashed potato.

Pat the chicken thighs dry and season generously with salt and pepper.
Roast over medium-high heat until deeply golden on both sides, about 7 minutes.
Push the chicken to one side of the pan, add the mushrooms and shredded cabbage, and cook until they soften and release their moisture, about 5 minutes.
Stir in the butter, sour cream and dill, scraping up the browned bits from the bottom of the pan.
Cover and simmer gently for about 19 minutes until the chicken is cooked through and the sauce has thickened.
Meanwhile, boil and mash the potato, keeping it warm.
Taste the sauce, adjust the seasoning, and serve the goulash spooned over the mashed potato.
