1onion, sliced
sauce: 1 cup dashi, 4 tbsp soy sauce, 3 tbsp mirin, 2 tbsp sake, 1 tbsp sugar
4eggs, beaten to swirl through
steamed short-grain rice
pickled ginger and spring onionto serve
