Cube the paneer and season it, then bake over medium-high heat until well browned, about 4 minutes.
Add the scotch bonnet pepper, plantain and callaloo, cooking until softened, about 6 minutes.
Stir in the thyme, jerk seasoning, allspice and coconut milk for a final minute.
Prepare the fried plantain separately according to package directions.
Let everything simmer for about 11 minutes so the flavors meld.
Taste and adjust the seasoning.
Serve hot over the fried plantain, garnished with fresh herbs.
