Ingredients

2 cupsfirm tofu
2snow peas
1ginger
1 cuprice noodles
2 tbspsoy sauce
1 tspShaoxing wine
2 tbspchili oil
1/4 cuphoisin sauce
3 tbspolive oil
to tastesalt and black pepper

Instructions

Press the tofu between paper towels to remove excess moisture, then cube it, season, and sear over medium-high heat until well browned, about 7 minutes.

Add the snow peas and ginger, cooking until softened, about 8 minutes.

Stir in the soy sauce, Shaoxing wine, chili oil and hoisin sauce for a final minute.

Cook the rice noodles separately and drain.

Let the tofu simmer for about 18 minutes so the flavors meld.

Taste and adjust the seasoning.

Serve hot over the rice noodles, garnished with fresh herbs.
