Ingredients

400gwater spinach (morning glory), cut into lengths
5 clovesgarlic, minced
2 cubesfermented red tofu (nam yu)
1 tbspoyster sauce or soy sauce
3 tbspvegetable oil

Instructions

Heat wok until very hot. Add oil.

Mash fermented tofu with oyster sauce in a small bowl.

Add garlic to wok, fry 15 seconds.

Add water spinach, toss vigorously over highest heat.

Add tofu sauce, toss 1 minute until wilted but still bright green. Serve immediately.
