Ingredients

4 cupswater
1/2 cupfresh ginger, peeled and grated
1 cupcaster sugar
2lemons, juiced
1/4 tspdried yeast
4 cupscold water to dilute
ice and lemon slicesto serve

Instructions

Boil ginger in 4 cups water 10 minutes. Strain.

Stir in sugar until dissolved. Cool to lukewarm.

Add lemon juice and yeast. Pour into sterilised bottles.
