Pease Pudding

A traditional Northumbrian split pea purée, eaten with ham or in a stottie. Simmering the peas with carrot and bay leaf, rather than just water, is what gives pease pudding real savoury depth.

Ingredients

400gyellow split peas, soaked overnight
1onion, halved
2carrots
2bay leaves
1 tspsalt
2 tbspbutter
salt and pepperto taste

Instructions

Place drained peas in a pot with onion, carrots, bay leaves and salt.

Cover with cold water. Simmer 45-60 minutes until peas are completely soft.

Drain. Remove vegetables and bay leaves.

Mash or blend to a thick puree.

Beat in butter. Season generously.
