Cube the paneer and season it, then sear over medium-high heat until well browned, about 5 minutes.

Add the garlic, cauliflower and onion, cooking until softened, about 5 minutes.

Stir in the turmeric, garam masala and cumin seeds for 4 minutes.

Warm the papadum separately.

Let everything simmer for about 5 minutes so the flavors meld.
