
Easy Saag Aloo
Spiced spinach and potato — a simple, comforting Indian side that easily turns into a main. Turmeric colours the potatoes, cumin and garam masala build warmth, and the spinach wilts into a silky sauce. Good with rice, roti, or a fried egg on top.

Heat oil in a wide pan and fry the potato cubes in a single layer, turning occasionally, until golden outside and almost tender, 10-12 minutes, don't crowd the pan or they'll steam instead of brown.
Push the potatoes aside, add the garlic and let it sizzle 30 seconds, then stir in the turmeric, cumin and garam masala and cook about a minute until fragrant, not browned.
Add spinach in batches, stirring until each wilts before adding more, until all the spinach has wilted into the pan.
Cook until the potatoes are fork-tender and any liquid has cooked back down, about 5 minutes, then season with salt and a squeeze of lemon.
