Ingredients

400gblack beans
150gcarrots
1/2 cupmushrooms
1/2 cupbell pepper
2 cupscouscous
1/4 cupchili flakes
1 tspcream
1 tbspolive oil
to tastesalt and black pepper

Instructions

Drain and season the black beans, then simmer them over medium-high heat until well browned, about 8 minutes.

Add the carrots, mushrooms and bell pepper, cooking until softened, about 4 minutes.

Stir in the chili flakes and cream for 4 minutes.

Cook the couscous separately and fluff with a fork.

Let the beans simmer for about 9 minutes so the flavors meld.

Taste and adjust the seasoning.

Serve hot over the couscous, garnished with fresh herbs.
