4Granny Smith apples, peeled and chopped
100gsugar
2 tbspwater
juice of halflemon

Salt pork skin heavily. Refrigerate 1 hour.

Pat dry.

Roast at 220°C for 30 minutes.

Reduce to 160°C for 1.5 hours.

Return to 220°C for 10 minutes to crackle.

Make apple sauce: cook apples with sugar and water until soft. Mash.

Rest pork 10 minutes.
