Slow-roasted pork belly with apple cider, fennel and crackling. Pouring the cider around the pork rather than over it keeps the skin dry enough to blister into proper crackling instead of turning soggy in the liquid.

Ingredients

1.5kgpork belly, skin scored
2apples, quartered
1fennel bulb, sliced
500mldry apple cider
1 tspfennel seeds
4 clovesgarlic
coarse saltfor crackling
salt and pepperto taste

Instructions

Salt pork skin very well. Refrigerate uncovered 1 hour.

Place fennel, apple and garlic in a roasting pan.

Lay pork belly skin-side up on top.

Pour cider around (not over) pork.

Roast at 160°C for 2 hours.

Turn to 220°C for 25 minutes to crackle.

Rest 15 minutes.

Deglaze pan juices for a sauce.
