A New England classic: cold poached lobster tossed in a light mayo dressing and piled into a toasted split-top bun.

Ingredients
600gcooked lobster meat, roughly chopped
4split-top hot dog buns or brioche rolls
4 tbspmayonnaise
2 stalkscelery, very finely diced
1 tbsplemon juice
1 tsplemon zest
1 handfulfresh chives, chopped
1 tspsalt and white pepper
60gbutter for toasting buns
Instructions

Mix lobster with mayonnaise, celery, lemon juice, lemon zest and chives.

Season with salt and white pepper.

Refrigerate at least 30 minutes for flavours to develop.

Butter the sides of each bun generously.

Toast buns in a pan until golden and crispy on the outside.

Fill each toasted bun generously with lobster mixture.

Serve immediately with kettle chips and a cold beer.
