Plump pork sausages baked into a golden, puffed Yorkshire pudding batter, a great British comfort dish.

Instructions
Preheat oven to 220°C. Make batter: whisk flour and salt, beat in eggs, then gradually add milk until smooth. Rest 30 minutes.
Place lard in a deep baking tray and heat in the oven for 10 minutes until smoking.
Brown sausages in a pan 5 minutes. Place in the hot tray.
Pour batter around sausages. Scatter thyme over the top.
Bake 30 minutes without opening the oven — the batter should puff up and turn deep golden. Serve with onion gravy.
