600gchicken mince
6 clovesgarlic, minced
6bird eye chillis, minced
3 tbspoyster sauce
2 tbspfish sauce
1 tbspdark soy sauce
1 tspsugar
3 large handfulsholy basil leaves
3 tbspvegetable oil
4eggs, fried
400gsteamed jasmine rice
Instructions

Heat wok over maximum heat, add oil.

Fry garlic and chilli 30 seconds until very fragrant.

Add chicken mince, stir-fry breaking up lumps until cooked and slightly caramelised.

Add oyster sauce, fish sauce, dark soy and sugar.

Toss everything together over high heat until sauce reduces and coats meat.

Remove from heat and toss through holy basil.

Serve over rice topped with a crispy fried egg.
