Ingredients

400gwide rice noodles
300gbeef or chicken, thinly sliced
4 clovesgarlic, minced
4bird eye chillis, minced
1red pepper, sliced
2eggs
3 tbspoyster sauce
2 tbspfish sauce
1 tbspdark soy sauce
1 tspsugar
2 large handfulsholy basil or Thai basil
3 tbspvegetable oil

Instructions

Soak dried noodles if needed, separate fresh noodles carefully.

Mix oyster sauce, fish sauce, dark soy and sugar.

Heat wok until smoking, add oil.

Fry garlic and chilli 30 seconds until fragrant.

Add meat and cook through.

Push to side, crack eggs and scramble briefly.

Add noodles and sauce, toss vigorously over high heat.

Remove from heat, toss through basil and serve immediately.
