600gchicken thighs, sliced
400mlcoconut milk
600mlchicken stock
3cmgalangal, sliced
2 stalkslemongrass, bruised
6kaffir lime leaves
200goyster mushrooms
3 tbspfish sauce
3 tbsplime juice
2red chillis, bruised
1 tsppalm sugar
1 handfulfresh coriander
Instructions

Bring coconut milk and stock to a gentle simmer.

Add galangal, lemongrass, kaffir lime leaves and chillis.

Simmer 10 minutes to infuse.

Add chicken and mushrooms, simmer 10 minutes until chicken is cooked.

Season with fish sauce, lime juice and palm sugar.

Taste — it should be creamy, sour, salty and fragrant.

Scatter with coriander and serve with jasmine rice.
