Ingredients

2 cupsfirm tofu
200ggarlic
200gbok choy
1 cupsnow peas
300gegg noodles
2 tsprice vinegar
1 tspsesame oil
1 tbspchili garlic sauce
2 tbspolive oil
to tastesalt and black pepper

Instructions

Press the tofu between paper towels to remove excess moisture, then cube it, season, and simmer over medium-high heat until well browned, about 7 minutes.

Add the garlic, bok choy and snow peas, cooking until softened, about 4 minutes.

Stir in the rice vinegar, sesame oil and chili garlic sauce for 4 minutes.

Cook the egg noodles separately and drain.

Let the tofu simmer for about 17 minutes so the flavors meld.

Taste and adjust the seasoning.

Serve hot over the egg noodles, garnished with fresh herbs.
