200gshiro flour (roasted chickpea flour)
2onions, very finely diced
4 clovesgarlic, minced
2 tbspberbere spice
4 tbspniter kibbeh or oil
500mlwater
saltto taste
Instructions

Slowly fry onion in niter kibbeh 20 minutes until deep golden.

Add garlic and berbere. Cook 3 minutes.

Whisk shiro flour with 200ml water until smooth.

Add remaining water to pot. Bring to simmer. Whisk in shiro paste.

Cook 15 minutes, stirring frequently, until thick and smooth. Season. Serve on injera.
