Ingredients

500ghoney
2Lwater
50ggesho (dried buckthorn hops) or 20g dried hop flowers

Instructions

Dissolve honey in warm water in a clean jar.

Add gesho. Cover loosely with cloth.

Ferment at room temperature 3–5 days, stirring daily.

Taste on day 3 — it should be mildly fizzy and faintly bitter.

Strain and refrigerate. Serve in berele glasses.
