400gwheat noodles
3 tbspChinese sesame paste or tahini
3 tbspchilli oil
2 tbspsoy sauce
1 tbsprice vinegar
1 tspsugar
1 tspSichuan peppercorn powder
1cucumber, julienned
3spring onions, sliced
toasted sesame seedsto garnish
Instructions

Cook noodles, drain and rinse under cold water. Toss with a little oil.

Mix sesame paste, chilli oil, soy, vinegar, sugar and peppercorn powder.

Toss cold noodles with sauce.

Top with cucumber, spring onions and sesame seeds.

Serve cold immediately.
