Slice the halloumi and stir-fry it over medium-high heat until well browned, about 10 minutes.
Add the yellow onion, jalapeno and celery, cooking until softened, about 3 minutes.
Stir in the BBQ sauce, black pepper, smoked paprika and ranch seasoning for 3 minutes.
Cook the white rice separately and fluff with a fork.
Let everything simmer for about 12 minutes so the flavors meld.
Taste and adjust the seasoning.
Serve hot over the white rice, garnished with fresh herbs.
