A classic Low Country dish of pan-fried shrimp in a spicy sauce served over creamy stone-ground grits. Adding the grits slowly to the boiling broth while whisking is what prevents lumps from forming, letting them cook down into a completely smooth, creamy base.

500glarge shrimp, peeled and deveined
1 cupstone-ground grits
4 cupswater or chicken broth
1 cupsharp cheddar, grated
3 tbspbutter
1/2 cupcream
6 rashersbacon, diced
4spring onions, sliced
2 clovesgarlic, minced
1/2 tspcayenne pepper
1 tbsplemon juice
salt and pepperto taste
Instructions

Bring broth to a boil. Add grits slowly. Simmer 20-25 minutes until thick. Stir in cheese, butter and cream.

Cook bacon until crispy. Remove. Sauté garlic and spring onion in drippings.

Add shrimp and cayenne. Cook 2-3 minutes until pink.

Add lemon juice and season. Pile over grits with crispy bacon.
