Fry bacon until crisp. Remove and set aside. Sauté onion and garlic in the fat 5 minutes.
Add butter, then stir in flour and cook 1 minute.
Whisk in stock and milk. Add potatoes and simmer 20 minutes until very tender.
Mash potatoes roughly with a fork for a chunky texture.
Stir in sour cream and cheddar until melted. Season well.
Serve topped with bacon, extra cheese and chopped chives.
