Tender sliced beef stir-fried with broccoli in a rich ginger and oyster sauce. Coating the beef in cornflour before it hits the wok is what gives it that silky, restaurant-style texture known as velveting, protecting it from turning tough over high heat.

Ingredients

600gbeef sirloin, thinly sliced
400gbroccoli, cut into florets
3 clovesgarlic, minced
2 tspfresh ginger, grated
4 tbspoyster sauce
2 tbspsoy sauce
1 tbspsesame oil
1 tbspcornflour
2 tbspvegetable oil
steamed riceto serve

Instructions

Toss beef with cornflour, 1 tbsp soy sauce and sesame oil.

Blanch broccoli in boiling water 2 minutes. Drain.

Stir-fry beef in hot oil over high heat 2 minutes. Remove.

Stir-fry garlic and ginger 30 seconds. Return beef and add broccoli.

Add oyster sauce and remaining soy sauce. Toss well. Serve over steamed rice.
