2 tinscrushed pineapple, well drained
2 cupscaster sugar
1/4 cupglucose syrup
4 tbspbutter
1 tsppineapple essence
200gdark chocolate
1 tbspcoconut oil
Instructions

Cook pineapple, sugar, glucose and butter over medium heat, stirring, until thick candy stage (120°C).

Stir in pineapple essence.

Pour into a lined tray. Cool completely. Cut into small squares.

Melt chocolate with coconut oil.

Dip each square in chocolate. Set on baking paper.
