60mlsoy sauce
60mlsesame oil
60mlrice wine
2 tbspsugar
6 clovesgarlic, smashed
5cmginger, sliced
2long red chillies
large bunchThai basil
Instructions

Heat sesame oil in a clay pot or wok. Fry garlic, ginger and chilli 1 minute.

Add chicken. Cook 5 minutes until golden.

Add soy sauce, rice wine and sugar. Cover and cook 20 minutes, turning once.

Uncover. Cook 5 more minutes until sauce reduces to a glaze.

Add basil. Toss. Serve directly from the pot with rice.
