Ingredients
300gred lentils
1onion, diced
3 clovesgarlic, minced
2cmfresh ginger, minced
2ripe tomatoes, diced
1 tspturmeric
1 tspground cumin
3 tbspcoconut oil
1 tspcumin seeds
1 tspmustard seeds
2dried red chillis
1 pinchasafoetida
1 handfulfresh coriander
Instructions

Simmer lentils in 900ml water with turmeric until completely soft.

Fry onion in 1 tbsp coconut oil until golden.

Add garlic, ginger and tomatoes, cook 8 minutes.

Add ground cumin, pour into lentils.

Simmer together 10 minutes.

For tadka: heat remaining coconut oil until smoking.

Add cumin seeds, mustard seeds, dried chillis and asafoetida — they will sizzle.

Pour tadka over dahl, scatter with coriander and serve.
