Ingredients

4portions fresh ramen noodles
1.2Lpork or chicken stock
3 tbspred miso paste
2 tbspgochujang
2 tbspsesame oil
400gpork belly chashu, sliced
4marinated ramen eggs, halved
200gsweetcorn
100gbamboo shoots
4spring onions, sliced
2 sheetsnori, halved
40gbutter

Instructions

Heat stock until simmering.

Whisk in red miso and gochujang until smooth.

Add sesame oil and adjust heat level.

Cook noodles, drain and divide between bowls.

Ladle hot spicy miso broth over noodles.

Arrange chashu, egg, corn, bamboo shoots and spring onions over noodles.

Add nori and a knob of butter which melts into the broth.
