Ingredients

300gflat rice noodles
200gprawns or firm tofu, diced
3eggs
3 clovesgarlic, minced
2shallots, sliced
3 tbsptamarind paste
2 tbspfish sauce
1 tbsppalm sugar or brown sugar
80gbean sprouts
4spring onions, sliced
60groasted peanuts, roughly chopped
3 tbspvegetable oil
2limes, cut in wedges

Instructions

Soak noodles in cold water 30 minutes until pliable, drain.

Mix tamarind, fish sauce and sugar in a small bowl until sugar dissolves.

Heat wok over very high heat until smoking, add oil.

Add garlic and shallots, stir-fry 30 seconds.

Add prawns or tofu, cook until just done.

Push to one side, crack eggs into wok and scramble briefly.

Add noodles and sauce, toss everything together vigorously.

Add bean sprouts and spring onions, toss 30 seconds.

Serve topped with peanuts and lime wedges.
