Balmain Bug Salad
Barbecued Balmain bug tails served warm over rocket with a mango and chilli dressing. Grilling the bugs briefly over high heat, just two to three minutes a side, is what keeps their flesh sweet and tender rather than turning rubbery from overcooking.
