
Classic Beef Burger
A juicy smash burger with caramelised edges, American cheese and special sauce on a brioche bun. Smashing the loosely formed beef balls flat the instant they hit the hot pan maximises their surface contact for a deeply caramelised, crispy edge.

Instructions
Mix mayo, ketchup, mustard, pickles and paprika into special sauce.
Divide beef into 4 loose balls — do not compress.
Heat a cast iron pan until smoking hot, add oil.
Place beef balls in pan and smash flat immediately with a spatula.
Season with salt, cook 2 minutes until edges are very crispy and caramelised.
Flip, add cheese immediately and cook 1 more minute.
Toast buns cut side down in the pan.
Build: sauce, lettuce, tomato, onion, patty. Serve immediately.
