Ingredients

600gbeef mince 80/20 fat ratio
4brioche burger buns
4 slicesAmerican cheese
1white onion, very thinly sliced
1iceberg lettuce, shredded
2ripe tomatoes, sliced
4 tbspmayonnaise
2 tbspketchup
1 tbspAmerican mustard
2 tbsppickles, chopped
1 tsppaprika
2 tbspvegetable oil

Instructions

Mix mayo, ketchup, mustard, pickles and paprika into special sauce.

Divide beef into 4 loose balls — do not compress.

Heat a cast iron pan until smoking hot, add oil.

Place beef balls in pan and smash flat immediately with a spatula.

Season with salt, cook 2 minutes until edges are very crispy and caramelised.

Flip, add cheese immediately and cook 1 more minute.

Toast buns cut side down in the pan.

Build: sauce, lettuce, tomato, onion, patty. Serve immediately.
