800gchicken thighs, boneless, cut in bite-sized pieces
4 tbspsoy sauce
2 tbspsake or dry sherry
2cmfresh ginger, grated
3 clovesgarlic, grated
1 tbspsesame oil
80gpotato starch or cornflour
1Lvegetable oil for frying
2lemons, cut in wedges
4 tbspJapanese mayonnaise
Instructions

Marinate chicken in soy, sake, ginger, garlic and sesame oil for 1 hour minimum.

Heat oil to 160C.

Drain chicken, coat well in potato starch.

First fry: cook chicken in batches 4 minutes, remove and rest 5 minutes.

Increase oil to 190C.

Second fry: cook chicken again 2 minutes until very crispy and golden.

Serve immediately with lemon wedges and Japanese mayonnaise.
