Ingredients

200gsweet potato glass noodles
200gbeef sirloin, thinly sliced
200gspinach, blanched and squeezed
6shiitake mushrooms, sliced
2carrots, julienned
1onion, sliced
3 clovesgarlic, minced
4 tbspsoy sauce
3 tbspsesame oil
2 tbspsugar
3 tbspvegetable oil
3 tbspsesame seeds

Instructions

Soak glass noodles in cold water 30 minutes, cook in boiling water 5 minutes, drain.

Toss noodles with 2 tbsp soy sauce and 1 tbsp sesame oil.

Separately stir-fry beef, carrots, mushrooms and onion, seasoning each lightly.

Season spinach with sesame oil and soy.

Mix remaining soy sauce, sesame oil and sugar for dressing.

Combine noodles with all vegetables and beef.

Toss with dressing and sesame seeds, serve at room temperature.
