1½ lbs80/20 ground beef in balls
2 cupscremini mushrooms, sliced and sautéed
4 slicesSwiss cheese
4brioche buns, toasted
1 tbspWorcestershire sauce in mushrooms
dijon aioli: mayo, Dijon, garlic
lettuce and tomato

Sauté the sliced mushrooms with the Worcestershire sauce until deeply browned and any liquid has cooked away, then set aside.

Smash the beef balls flat on a hot griddle and season.

Cook about 2 minutes, flip, add Swiss cheese and cook until melted.

Spread dijon aioli on the toasted buns, add lettuce and tomato, then top with the patty and the sautéed mushrooms.
