Thick-cut fries loaded with beef chilli, cheddar, jalapeños and sour cream. Double-frying the chips, first at a lower temperature and then again hotter, gives them a properly crisp exterior sturdy enough to hold up under the chilli and cheese.

Double-fry chips: 150°C for 6 minutes, then 185°C for 3 minutes until crispy.

Pile chips on a sheet pan.
