Instructions

Mix pepper, salt, garlic powder and paprika. Rub all over brisket.

Smoke or oven-roast covered at 120°C for 6-8 hours until a deep bark forms and the meat is probe-tender at 90°C.

Rest wrapped in foil for 1 hour.
