Barbadian Fish Cakes

Light, crispy Bajan salt fish fritters with herbs and scotch bonnet. Dropping the batter into oil at a steady 180°C gives the fritters their crisp exterior while the inside cooks through evenly, rather than turning greasy.

Ingredients

300gsalt fish, soaked overnight and flaked
200gplain flour
1egg
150mlwater
1small onion, finely diced
1/2scotch bonnet, minced
2 sprigsthyme, leaves only
2spring onions, finely sliced
1 tspbaking powder
oilfor frying

Instructions

Drain and flake salt fish.

Mix flour, baking powder, egg and water to a smooth batter.

Stir in fish, onion, scotch bonnet, thyme and spring onion.

Drop spoonfuls into 180°C oil. Fry 3–4 minutes until golden.

Drain on paper. Serve hot with hot sauce.
