Ingredients

600gseedless watermelon, cut in cubes
3 tbspsoy sauce
1 tbspsesame oil
1 tbsprice vinegar
1 tspsriracha
400gsushi rice, cooked and seasoned
200gedamame, cooked
2avocados, sliced
1cucumber, thinly sliced
sesame seeds and spring onionsto serve
nori stripsto serve

Instructions

Mix soy sauce, sesame oil, rice vinegar and sriracha into dressing.

Toss watermelon cubes in half the dressing and marinate 15 minutes.

Divide seasoned sushi rice between bowls.

Arrange marinated watermelon over rice.

Add edamame, avocado and cucumber.

Drizzle remaining dressing over everything.

Scatter with sesame seeds and spring onions.
