Honey and Soy Glazed Duck Breast

A Modern British restaurant-style pan-seared duck with honey-soy glaze and pak choi. Starting the duck skin-side down in a cold pan, rather than a hot one, slowly renders the fat and crisps the skin without the meat overcooking underneath.

Ingredients

4duck breasts, skin scored
4 tbspsoy sauce
2 tbsphoney
1 tbsprice wine or dry sherry
1 tspfive-spice
2 clovesgarlic, minced
4heads pak choi, halved
2 tbspsesame oil
steamed riceto serve

Instructions

Mix soy, honey, rice wine, five-spice and garlic.

Score duck skin. Pan-fry skin-side down in a cold pan over medium heat 8-10 minutes.

Flip. Finish in oven at 180°C for 10 minutes.

Rest 5 minutes.

Stir-fry pak choi in sesame oil. Drizzle duck with honey-soy glaze. Slice and serve.
