4matjes herring fillets or pickled herring
1red onion, thinly sliced
100mlwhite vinegar
4 tbspsugar
1/2 tspallspice
1bay leaf
dillto serve
sour creamoptional
Instructions

Make brine: bring vinegar, sugar, allspice and bay to a boil. Cool completely.

Slice herring into bite-sized pieces.

Layer herring and onion in a jar. Pour cold brine over.

Refrigerate at least 4 hours. Improves over 2–3 days.

Serve on rye bread with sour cream and dill.
