Drain and season the black beans, then sear them over medium-high heat until well browned, about 4 minutes.
Add the poblano peppers and white onion, cooking until softened, about 5 minutes.
Stir in the queso fresco, ancho chile, cumin and lime juice for 3 minutes.
Warm the flour tortillas separately.
Let the beans simmer for about 17 minutes so the flavors meld.
Toss through the cilantro just before serving.
Serve hot over the flour tortillas, garnished with fresh herbs.
