
Carnivore T-Bone
A massive T-bone steak with both tenderloin and strip — cooked simply in a cast iron pan. Standing the steak on its fat edge to sear it separately for two minutes renders that strip of fat properly instead of leaving it chewy.

Instructions
Remove steaks from fridge 1 hour before cooking.
Season very generously with salt and pepper.
Heat cast iron pan until smoking with tallow.
Sear steaks 4 minutes each side.
Sear the fat edge standing upright for 2 minutes.
Add butter and baste continuously 3 minutes.
Rest 8 minutes.
Serve with all pan juices and butter.
