Homemade British pork and leek sausage rolls — far better than shop-bought. Pressing the pastry seam firmly to seal it stops the filling leaking out and burning onto the tray as the rolls bake.

500gpork mince
1large leek, finely chopped
2 clovesgarlic, minced
1 tspdried thyme
1 tspfennel seeds
1/2 cupbreadcrumbs
1egg
salt and pepperto taste
2 sheetspuff pastry
1egg, beaten for wash
Instructions

Mix pork, leek, garlic, thyme, fennel seeds, breadcrumbs and egg. Season.

Cut pastry into strips. Place filling in a log down the centre.

Roll up and press to seal.

Cut into portions. Brush with egg.

Bake at 200°C for 25-28 minutes.
