Ingredients

200gplain flour
200mldashi stock or water
3eggs
400gwhite cabbage, finely shredded
200gpork belly, thinly sliced
4spring onions, sliced
4 tbspokonomiyaki sauce
4 tbspJapanese mayonnaise
2 tbspaonori seaweed flakes
10gbonito flakes
3 tbspvegetable oil

Instructions

Whisk flour with dashi and eggs until smooth.

Fold in cabbage and spring onions — batter will be very thick.

Heat oil in a wide pan, add half the batter and shape into a round.

Lay pork slices over the top.

Cook 5 minutes until set on the bottom, flip carefully.

Cook a further 5 minutes, flip once more.

Top with okonomiyaki sauce, mayo, aonori and bonito flakes — the bonito will wave in the heat.
